Coconut Oil is one of those choices that is sure to benefit everyone who chooses to add it to their diets. Coincidentally,  it is as good for us externally as internally. I’ve said before that I am with coconut oil like the dad in “My Big Fat Greek Wedding” is with windex… I use it for everything. Right now, I have a five gallon bucket of it sitting next to my desk because we use so much and I don’t have anywhere else to keep it…

Today, I’m sharing my top 101 (yes 101!!) uses for coconut oil:

 What Kind of Coconut Oil?

For external uses, expeller pressed or other types of refined coconut oil will work, but for internal use, an unrefined virgin coconut oil is best. My husband and I both take about 4 tablespoons a day and the kids get a couple tablespoons in food, smoothies, or hot herbal tea.

High sodium intake as a source of high blood pressure has been an unchallenged dogmatic mantra for decades. But a few renegade MDs, several naturopaths, and chiropractors have challenged the unproven hypothesis of salt being the basis of high blood pressure (HBP). Turns out that the link between high sodium intake and elevated blood pressure is a false one.

Pure, unrefined salt is actually a necessary and helpful dietary component. Perhaps the most well known salt promoter is Dr. David Brownstein, MD, author of Salt Your Way to HealthRefined commercial table salt, used excessively in processed foods, is processed with toxic chemicals and stripped of its inherent nutritional value. It’s mostly poison with very little nutrition, though even using table salt often won’t lead to high blood pressure.

Actually, those with high blood pressure (and everyone, really) should just consume more foods rich in potassium. Meta-analysis’ show how low potassium intake has the same impact on blood pressure as high salt consumption – the real problem is an imbalance between sodium and potassium.

It appears the new HBP dietary villain could be high fructose corn syrup (HFCS), which has been already linked to obesity, diabetes, and cardiovascular health issues.

HFCS is more commonly used in processed foods, fruit juices, sweets, and sodas than cane or beet sugar. It’s cheaper than sucrose (table sugar), and satisfies the “sweet tooth” SAD (standard American diet) consumers’ desire.

According to the USDA, HFCS consumption has increased significantly from 1970 to 2005, and it is now the number one source of empty calories in America. In fact, Americans eat approximately 35 lbs on average of high-fructose corn syrup each year.

How HFCS Contributes to Hypertension or High Blood Pressure

Fructose in fruit is tied to several other nutritional compounds that balance out fructose’s negative aspects. But fructose isolated from corn and made into a syrup is too much for the body to metabolize. Even table sugar metabolizes better.

Robert H. Lustig, MD, a Professor of Pediatrics in the Division of Endocrinology, explains how the rise in HFCS use over the past three to four decades is behind the obesity and diabetes epidemic, both of which contribute to high blood pressure.

HFCS or “corn sugar” or “corn syrup” initiates a toxic overload from insufficient metabolism. The liver doesn’t convert isolated, concentrated fructose into energy well and stores it as fat instead. Add this to the dangers of GMO corn with traces of extremely toxic glyphosate herbicides and mercury as a byproduct from the conversion process. This toxic overload leads to obesity, fatty liver, other liver complications, and kidney disease.

Dr. Richard Johnson of the University of Colorado has been a researcher of investigations into HFCS and high blood pressure. His research revealed definite links of high HFCS consumption to high blood pressure.

What’s more, one of the toxic waste products remaining in the body from regular HFCS consumption is uric acid. A test of 17 subjects with high uric acid counts showed all 17 with high blood pressure. Uric acid inhibits nitric oxide (NO) in the blood vessels.

Nitric oxide is a volatile gas that helps maintain blood vessel elasticity. When that elasticity decreases, blood pressure increases. A safe range of uric acid is from 3 to 5.5 milligrams per deciliter (0.1 liter), with 4 mg/dl ideal for men and 3.5 mg/dl for women. Higher numbers threaten blood pressure increases. You can ask your health professional about a uric acid test or shop the Internet by inserting “uric acid blood testing” in your search engine.

There are many published studies on the relationship between coconut oil, metabolism and weight loss. Research shows that coconut oil contains unique fatty acids that stimulate metabolism, supply the body with tremendous energy, and promote weight loss. Most people are unaware that hypothyroidism is an autoimmune disease and this is one of the main reasons why conventional pharmaceutical treatments are ineffective for more than 80 percent of patients with sluggish thyroids.

Why Thyroid Medication Does Not Work

Taking replacement thyroid hormones without addressing the underlying immune imbalance is like trying to change the type of oil in your engine with the hope that your transmission will stop failing…useless.

The ultimate effect of hypothyroidism, whether it’s caused by iodine deficiency or autoimmunity, is to decrease the amount of thyroid hormone available to the body. The conventional approach is to simply replace these hormones with either synthetic or bio-identical forms.

Patient doesn’t have enough hormones? Give more hormones. Simple, right? Not.

Once again the conventional approach falls short because it ignores the underlying cause of the problem.

Even the best thyroid treatment may not work if underlying adrenal and hormonal problems are not dealt with effectively. If your doctor is not looking at your adrenal and hormonal situation, then an important part of your health is being overlooked.

In autoimmune disease the body attacks itself. It does this the same way it attacks foreign invaders like bacteria and viruses: with T-cells, B-cells, natural killer cells, and cytotoxic T cells. The immune response also involves proteins called cytokines, chemical messengers that pass messages between cells.

A team of scientists from Yale University recently reported that junk food diets and processed foods could be partly to blame for autoimmune diseases.

Thyroid Hormones

The production and use of thyroid hormones is a complex and important process:

  • An understanding of the complex thyroid hormone process begins with iodide, a salt that is extracted from the blood and trapped by the thyroid gland.
  • Iodide is converted to iodine in the thyroid gland. (Here, 80% of the body’s iodine supply is then stored.) Iodine, in turn, is the raw material used in the manufacturing of thyroxine (T4), the key thyroid hormone.
  • Thyroxine itself is converted into triiodothyronine (T3) , which is the more biologically active thyroid hormone. (Only about 20% of triiodothyronine is actually formed in the thyroid gland, however. The rest is manufactured from circulating thyroxine in tissues outside the thyroid, such as those in the liver and kidney.
  • Two other important hormones in the process are thyroid-stimulating hormone (TSH or thyrotropin) and thyrotropin-releasing hormone (TRH).
  • TSH directly influences the whole process of iodine trapping and thyroid hormone production.
  • This hormone is secreted by the pituitary gland and monitored by TRH, which is produced in the hypothalamus gland. (Both the pituitary and hypothalamus glands are located in the brain.)
  • When thyroxine levels drop even slightly, the pituitary gland goes into action to pump up secretion of TSH so that it can stimulate thyroxine production.
  • Any abnormality in this intricate system of glands and hormone synthesis and production can have far-reaching consequences.

To Address The Thyroid You MUST Understand Inflammation

This self-attack by the immune system increases inflammation. And inflammation has a profound effect on all aspects of thyroid metabolism and physiology.

  • First, inflammation suppresses the hypothalamus-pituitary-thyroid (HPT) axis. One study showed a single injection of the inflammatory cytokine TNF-alpha reduced blood levels of TSH, T3, free T4, free T3 and TRH for 5 days. This shows inflammation disrupts the production and regulatory mechanisms of thyroid hormones. Thyroid medication will increase the levels of T4 (and possibly T3), but it doesn’t address the other effects of HPT axis suppression.
  • Second, inflammation decreases both the number and sensitivity of thyroid hormone receptors. If there aren’t enough receptors, or they aren’t sensitive enough, it doesn’t matter how much thyroid medication we take. The cells won’t be able to use it. It’s like when my grandpa used to turn down his hearing aids while he was watching the football game. It didn’t matter how much my grandma yelled at him — he couldn’t hear a word she said.
  • Third , inflammation decreases the conversion of T4 to T3. T4 is the inactive form of thyroid hormone. The body has to convert it to the active T3 form before it can be used. Most synthetic hormone medications on the market are T4. If you give a T4 medication (like Synthroid, Levoxyl, Unithroid, etc.) to someone with inflammation, it’s not going to work because they can’t convert the T4 to T3.

A TSH test is just one part of the overall picture. You can have a TSH that falls in the “normal range,” or is in the higher or lower end of normal, but you can actually have a thyroid problem or autoimmune thyroid disease. A good practitioner doesn’t rule out a thyroid condition solely on the basis of a TSH, but instead, runs additional tests, such as Free T4, Free T3. Thyroid antibodies can diagnose autoimmune conditions long before other blood values become abnormal. AND, treatment for people with antibodies can actually help forestall full-scale development of thyroid disease in some people.

Long-term suppression of thyroid stimulating hormone (TSH) causes cardiac side-effects and contributes to decreases in bone mineral density (high TSH levels are also well known to contributes to osteoporosis.) It may also cause elevated blood glucose levels, heart failure, coma and adrenal insufficiency. TSH directly influences the whole process of iodine trapping and thyroid hormone production so use of synthroid directly affects how the body metabolizes iodine.

The only way to do that is to address the problem at its root by regulating the immune system and decreasing inflammation.

Other Causes of an Unbalanced Thyroid

A sluggish thyroid may be triggered by many unseen causes, including…

    • MSG and bad fatty acids, so common in our diet, can weaken your thyroid.
      • A deficiency of iodine is on the rise, and without enough iodine, your thyroid won’t produce the hormones you need.
      • As you age, your risk of an unbalanced thyroid dramatically increases.
      • Popular prescription drugs for your heart, bones and blood sugar can lead to a sluggish thyroid.
      • Exposure to too much fluoride or chlorine in drinking water can interfere with normal thyroid function.
      • Menopause or pregnancy and treatments such as Estrogen Replacement Therapy can throw the thyroid out of whack.
      • A family history of thyroid concerns may cause thyroid dysfunction.
      • Autoimmune health problems can cause your thyroid to go haywire.

      Coconut Oil Regulates The Immune System and Decreases Inflammation.

Coconut oil has always received a criticism because a group of scientists had incorrectly promoted that it increased LDL cholesterol. However, it never did increase LDL cholesterol, but it did increase HDL or good cholesterol. That distinction was never corrected in the mainstream press and the misconception still continues to this day.

“Why the mainstream persists in this delusion of criticizing coconut oil is beyond the understanding of many in the natural food industry,” said raw food expert and retailer Ian Macdonald.

“You know you’re on to something healthy when national and international health agencies are advising AGAINST it,” Macdonald stated. “This is typically due to influences from pharmaceutical and high profile corporations who strive on keeping the population sick and diseased,” he added.

For example the Food and Drug Administration (FDA), World Health Organization (WHO), International College of Nutrition, the United States Department of Health and Human Services, American Dietetic Association (ADA), American Heart Association (AHA), British National Health Service (NHS), and Dietitians of Canada all simultaneously recommend AGAINST the consumption of coconut oil. Unfortunately, and against the better interest of the public, none of the above organizations have a track record of recommending healthy solutions for the public, so Macdonald suggests that when these organizations recommend against something, “that is your cue to incorporate it into your diet, with proper research of course.” Coconut oil may be the perfect example.

50 percent of the fat content in coconut oil is a fat rarely found in nature called lauric acid. Your body converts lauric acid into monolaurin, which has anti-viral, anti-bacterial and anti-protozoa properties. Lauric acid is a powerful virus and gram-negative bacteria destroyer, and coconut oil contains the most lauric acid of any substance on earth!Nigel Turner and Jiming Ye from Sydney’s Garvan Institute of Medical Research compared fat metabolism and insulin resistance in mice fed coconut oil and lard based diets.

“The medium chain fatty acids like those found in coconut oil are interesting to us because they behave very differently to the fats normally found in our diets,” said study leader Turner.

“Unlike the long chain fatty acids contained in animal fats, medium chain fatty acids are small enough to enter mitochondria – the cells’ energy burning powerhouses – directly where they can then be converted to energy.”

Coconut oil has a direct effect in suppressing inflammation and repairing tissue, and it may also contribute by inhibiting harmful intestinal microorganisms that cause chronic inflammation.

Many people who have suffered with inflammatory conditions of the intestines like Crohn’s disease have successfully used coconut oil for its anti-inflammatory and soothing properties.

The medium-chain fatty acids and monoglycerides found in coconut oil are the same as those in human mother’s milk, and they have extraordinary anti-inflammatory and antimicrobial properties. By disrupting the lipid structures of microbes, they inactivate them. Lauric acid, its metabolite monolaurin and other fatty acids in coconut oil are known to protect against infection from bacteria, viruses, yeast, fungi and parasites. While not having any negative effect on beneficial gut bacteria, coconut oil inactivates undesirable microbes.

An excellent study that reviewed many previous studies on this topic was published in the Journal of Nutrition (Vol. 132, pages 329-332)

  •  This study was conducted by researchers at McGill University. They reported that several different studies have shown weight loss equivalent to 12 – 36 pounds a year simply by changing the types of oils used in everyday cooking and food preparation.Most of the oils that we use to cook food and those used in commercially-prepared foods also have a negative affect on the thyroid. These are known as polyunsaturated or vegetable oils. They may in fact be the worst villains in the spread of thyroid diseases.The thyroid, though small otherwise, is one of the largest glands in the endocrine system. Diseases of the endocrine system are mostly caused due to production disorders that lead to inadequacy or excess of hormones or inappropriate response to hormones by tissues.Dr. Bruce Fife’s book Eat Fat, Look Thin explains how he discovered the relationship between coconut oil and improved thyroid health. It explains how to use coconut oil and incorporate it into a sensible diet.Another book by Dr. Fife is The Healing Miracles of Coconut Oil and Eat Fat, Look Thin which contains references to numerous studies.

Is coconut oil a thyroid cure? Not by itself. Can it help people with low thyroid function? Yes, because it stimulates metabolism and boosts energy. The article below reinforces what the medical community has known since the beginning of medicine, we need salt. But it is whole unprocessed salt we need. Salt in its natural forms has a multitude of natural minerals. Natural Sea Salt and Himalayan Sea Salt are good salt solutions.

 

A new study found that low-salt diets increase the risk of death from heart attacks and strokes and does not prevent high blood pressure.

The investigators found that the less salt people ate, the more likely they were to die of heart disease – 50 people in the lowest third of salt consumption (2.5 grams of sodium per day) died during the study as compared with 24 in the medium group (3.9 grams of sodium per day) and 10 in the highest salt consumption group (6.0 grams of sodium per day). And while those eating the most salt, had on average a slight increase in systolic blood pressure – a 1.71-millimetre increase in pressure for each 2.5-gram increase in sodium per day; they were no more likely to develop hypertension.

“If the goal is to prevent hypertension with lower sodium consumption, this study shows it does not work” said the lead author, Dr. Jan A. Staessen, a professor of medicine at the University of Leuven, in Belgium.

Dr. Alderman said the new study is not the only one to find adverse effects of low-sodium diets. He studied people who had “high blood pressure” and found that those who ate the least salt were most likely to die.

He also said “lowering salt consumption has consequences beyond blood pressure. It also, for example, increases insulin resistance, which can increase the risk of heart disease.”

 To survive and thrive, the body needs salt. That’s a medical fact. Consider the fact that persons in critical condition are often given intravenous injections (IV). IV’s are nothing more than purified water and salt. It has been said, “IV is the only cure that the doctor has in his bag of tricks.”

I once heard a story about a very rich man who had a lot of health problems. He supposedly tired of many surgeries and drugs and checked himself into the hospital and paid the doctors well to give him nothing more than an IV until he died. After his death an autopsy was performed and to the doctors’ amazement, every organ had completely healed.

It does make a person wonder when most people who receive an IV end up recovering, “Why do the doctors want to restrict salt in our diets?” Is it so you will eventually need an IV and they can charge your insurance company $600 or more for a pint of salt water?

The official food policy of our federal government aims to radically reduce salt levels, although medical evidence is mounting that a low-sodium diet risks diabetes, other diseases and premature death.

 “If the object is to reduce blood pressure then do it by increasing exercise or eating more salads and vegetables, as these have no negative consequences. Unfortunately, the salt reduction strategy being promoted at the UN Summit will have negative health outcomes,” said Morton Satin, Vice President of Science and Research at the Salt Institute.

Scientific American, the most authoritative publication explaining science for a broad audience, has analyzed recent medical studies on salt and reviewed more than a century of previous research to conclude, “It’s time to end the war on salt.”

The zealous drive by politicians to limit our salt intake has little basis in science.

Contrary to popular opinion, reducing salt intake does not improve the health of the heart or the circulatory system. A new study found that low-salt diets increase the risk of death from heart attacks and strokes and do not prevent high blood pressure.”

Benjamin Franklin states in his biography that when struck with a cold, he would go to the sea and drink the water. Because of the antiviral properties of sea salt, he was cured the next day.

My father and grandfather would both stir a heaping Tsp. of salt into a quart of warm water and drink it down at the beginning of the flu or a cold or any kind of food poisoning. That was normally the end of the problem. I have since carried on the practice with great results.

Certain cultures make a practice of drinking 1 tsp. of salt stirred into a glass of warm water first thing every morning on an empty stomach. Those who subscribe to this practice are among the healthiest people on the planet.

Frequently, I stir a tsp. of salt into 20 oz. of water the first thing in the morning and drink it down on an empty stomach. I may do this for days or weeks at a time. I have found it to be a very healthy practice.

I recommend a minimum intake of at least ½ tsp. salt daily, but it should be from a good source like Redmond Salt or Himalayan Salt available at most health food stores, or can be purchased at http://www.realsalt.com. Typical table salt is highly processed, overheated and has Aluminum added to prevent clumping.

Hippocrates (460 BC) the father of medicine discovered the therapeutic qualities of seawater by noticing the healing effects it had on the injured hands of fishermen. He then employed salt therapy by applying the age-old method of inhaling the steam from boiled salt water and also recommended that his understudies bathe in the ocean to reap all the benefits.

 Greek medicine had already discovered topical use of salt for skin lesions 2000 years ago along with drinking salty or mineralized waters for digestive troubles and inhaling salt for respiratory diseases.

It’s Magical how each food  below resembles the part of the body that it benefits the most.

Writing this today, the Irony of it all struck me and I couldn’t help but chuckle.

20 years ago,  Bottled and Water were not commonly found in the same sentence nor were the words Obesity and Epidemic.  Today they are predominant word pairs.  Nutritional insufficiency and dehydration underlay almost all disease in a time when there is more food and water available.

More and more we receive our food as processed, packaged in bags and boxes ~ So much of what is eaten today is not whole foods and when it is it a whole food, it is likely over processed.  We see more people now, than ever before have  box or bag like shapes.  Dieting has become BIG BUSINESS.  It is consistently pointed out that fast and processed foods are playing a “huge” role in the size, shape and health of North Americans. The universe has the last laugh  – too many of us are now the shape of those foods containers.

Too funny~ pun intended – we are the BIG BUTT of Universal Irony!

I am so proud of myself – last night I chose to snack on the leftover mixed veggies rather than the absolutely creamy yummy Cherry loaded ice-cream. NOT!  Our freezer is in the garage and it was too cold to go out there and freeze my buns off in my slippers and jammies.  The steamed veggies drizzled in a bit of butter, sprinkled with ground peppercorns and sea salt were in the fridge. I chose  the easy route – and it was definitely the better choice for my BUTT and my Health. It tasted pretty darn good too.

Big life lesson that I get is – always make the better choices the easier ones so we just naturally opt for them.

No matter who you are,  when you are hungry or tired – fast, easy and tasty always wins over inconvenient and  time consuming. So set your self up so that fast, easy and tasty is always the best choice.  That is why ice cream will always live in the the freezer in the garage not the fridge in the house.  I set myself up so the fast, easy, tasty choice just also happened to be the better SELF CARE choice.

Now to the IMPORTANT PARTS OF THIS POST

It’s been said that God first separated the salt water from the fresh, made dry land, planted a garden.

A sliced Carrot looks like the human eye. The pupil, iris and radiating lines look just like the human eye… and YES, science now shows carrots greatly enhance blood flow to and function of the eyes.

 

A Tomato has chambers and is red. The heart has four chambers and is red. All of the research shows tomatoes are loaded with lycopine and are indeed pure heart and blood food.

 

Grapes hang in a cluster that has the shape of the heart. Each grape looks like a blood cell and all of the research today shows grapes are also profound heart and blood vitalizing food.

 

A Walnut looks like a little brain, a left and right hemisphere, upper cerebrums and lower cerebellums.  Even the wrinkles or folds on the nut are just like the neo-cortex. We now know walnuts help develop more than three (3) dozen neuro-transmitters for brain function.

 

Kidney Beans actually heal and help maintain kidney function and yes, they look exactly like the human kidneys.

 

Celery, Bok Choy and many more look just like bones. These foods specifically target bone strength. Bones are 23% sodium and these foods are 23% sodium. If you don’t have enough sodium in your diet, the body pulls it from the bones, thus making them weak.. These foods replenish the skeletal needs of the body.

 

Avocadoes, Eggplant and Pears target the health and function of the womb and cervix of the female – they look just like these organs. Today’s research shows that when a woman eats one avocado a week, it balances hormones, sheds unwanted birth weight, and prevents cervical cancers.

And how profound is this?  It takes exactly nine (9) months to grow an avocado from blossom to ripened fruit. There are over 14,000 photolytic chemical constituents of nutrition in each one of these foods (modern science has only studied and named about 141 of them).

 

Figs are full of seeds and hang in twos when they grow. Figs increase the mobility of male sperm and increase the numbers of Sperm as well to overcome male sterility.

Heartburn: Bananas have a natural antacid effect in the body, so if you suffer from heartburn, try eating a banana for soothing relief.

Febreze is classified as an air freshner, created by Proctor & Gamble. It reports to work by “trapping” odor molecules in a donut-shaped chemical.

The first thing that is really important to understand: the product does not remove odor molecules and it doesn’t clean the item it comes into contact with.

The odor molecules are still there. Your nose just can’t perceive them because you smell the chemical product instead.

That alone should be your first warning. We know inhalation of any chemicals is dangerous, and several of its ingredients listed below are known to irritate the lungs…but this is a chemical whose entire purpose is to be inhaled!

Unfortunately there is not much data being shared on Febreze and their many products, but the Environmental Working Group (EWG) did conduct a test for the ingredients of one of their products, Febreze Air Effects.

Shockingly, P&G only disclosed THREE ingredients in this product, but the EWG…they found 87 chemicals in total!

Now this is just one Febreze product, but the fact that only 3 ingredients were disclosed and that so many undisclosed ingredients are dangerous, it’s safe to assume that their other air freshners are just as dangerous.

Febreze Ingredients

Below you’ll find a list of just some of the 87 chemicals found by the EWG in Febreze Air Effects, listed in order of their toxicity to humans:

  • BHT – Known as a neurotoxin, endocrine disruptor, immunotoxicity, non-reproductive organ system toxicity, skin eye and lung irritator
  • Acetaldehyde – Known to cause cancer, toxic to reproduction and development, immunotoxin, non-reproductive organ system toxin, skin, eye and lung irritator
  • “Fragrance” – One of the three ingredients actually disclosed, it’s a neurotoxin, immunotoxin and allergen
  • Propylene Glycol – Causes cancer, allergies, toxic to immune system, accumulates in the system, non-reproductive organ system toxin, is classified with “enhanced skin absorption” and irritates the skin, eye and lung
  • 1,3-Dichloro-2-propanol – Carcinogenic (causes cancer)
  • Limonene – Allergen, immunotoxin and skin, eyes and lung irritator
  • Methyl pyrrolidone – Toxin to reproduction and development, allergen and immunotoxin, non-reproductive organ system toxin and skin, eyes and lung irritator
  • Alcohol denatured – Also disclosed in the ingredients of Febreze, it’s linked to cancer, developmental/reproductive toxicity, organ system toxicity and skin, eyes and lung irritator
  • Butylphenyl methylpropion al – allergen, immunotoxin and and skin, eyes and lung irritator
  • Ethyl acetate – linked to developmental/reproductive toxicity, neurotoxicity, organic system toxicity and and skin, eyes and lung irritator
  • Geraniol – Linked to allergies, immunotoxicity, organi system toxicity and and skin, eyes and lung irritation
  • Linalool – allergen, immunotoxin, and and skin, eyes and lung irritator
  • Benzaldehyde – neurotoxin, and skin, eyes and lung irritator
  • Diethylene glycol monoethyl ether – non-reproductive organ system toxicity
  • Ethylhezanol – developmental and reproductive toxin and skin, eyes and lung irritator
  • Hexyl cinnamal – allergen, immunotoxin and skin, eyes and lung irritator

Again, it’s important to understand that these types of products are not only dangerous to our health, but they aren’t actually cleaning the air or eliminating odor. They are just masking it…the bacteria and molecules are still hanging around, maybe even making you sick themselves.

Manage Weight, Blood Sugar and Diabetes – Coconut Fiber

Today we have so many more choices  available in almost every aspect of our lives. That has led to bigger waistlines and butts all over north america. It’s not like any of us set out to become a bigger versions of ourselves – it just happens because of the choices we make.

I have to chuckle at my husband. He has a really sweet tooth and loves his coffee. Sometimes it is hard to get him to eat enough real food because he is full of his overly sweet coffee. He is not big on fresh veggies unless we grow them. Making sure that he gets good fibre and quality nutrition in the winter is a bit of a nightmare but he does love a good smoothie. So Wednesday, I make a double batch of the Mediterranean Diet shakes as smoothies because it is going to be a busy day. That takes getting lunch together off the schedule – so I think – and it did,  but he liked it so much, he would happily have drank my lunch too.

Typically – he thinks most of my health solutions taste like crap. So him sneaking the Truffles and offering to drink my smoothie if it is too much for me or volunteering to go get our vitamins (daily complete) – is such a hoot.

He has no idea how good for him any of these are and I AM NOT GOING TO TELL HIM. But I am sure going to continue to enjoy a private chuckle knowing that he is making a far healthier choice because he really likes the taste.

He is a great guy but very much his own person and has a very healthy skepticism so this is too funny. Maybe next winter he won’t accrue that seasonal spare tire that disappears during the summer.

It’s like my oxygen spa – he wouldn’t go near it. After he had a really bad bout of muscle spasms, it cleared them up pouf.  He felt so good afterwards, he is in it all the time now. Another one of those things that I tried to tell him would be good for him – but he had to be difficult about.  I would love to be able to say I told you so but I just bite my tongue and chuckle to myself.

Weight Management

Since you cannot digest dietary fiber, you do not derive any calories from it. Dietary fiber is calorie-free. You can eat as much as you like without worrying about gaining weight—good news for those who are concerned about their weight.

Fiber absorbs water like a sponge. For this reason, it aids in filling the stomach and producing a feeling of fullness. It provides bulk without supplying fat-promoting calories. Fiber also slows down the emptying of the stomach, thus maintaining the feeling of fullness longer than low-fiber foods. As a result, less food and fewer calories are consumed.

Studies have shown that consumption of an additional 14 grams of fibre a day is associated with a 10 percent decrease in calorie intake and a loss in body weight. The observed changes occur both when the fiber is from high-fiber foods, like fresh vegetables or coconut, or when it is from products made with high-fiber flours, such as coconut flour.

When you eat high-fiber foods that are generally low in calories, you crowd out higher calorie foods. Simply adding high-fiber foods into your diet will lower your calorie intake even if you eat the same volume of food as you normally do.

Blood Sugar and Diabetes

Blood sugar is an important issue for anyone who is concerned about heart disease, overweight, hypoglycemia, and especially diabetes because it affects all of these conditions.

Carbohydrates in our foods are broken down in the digestive tract and converted into glucose

(blood sugar). Meals that contain a high concentration of carbohydrates, particularly simple carbohydrates such as sugar and refined flours, cause a rapid rise in blood sugar. Since elevated blood sugar can lead to a coma and death, insulin is frantically pumped into the blood stream to avoid this. If insulin is produced in adequate amounts blood sugar is soon brought back down to normal. This is what happens in most individuals. However, if insulin is not produced quickly enough or if the cells become desensitized to the action of insulin, blood glucose can remain elevated for extended periods of time. This is what happens in diabetes.

Dietary fiber helps moderate swings in blood sugar by slowing down the absorption of sugar into the blood stream. This helps keep blood sugar and insulin levels under control. Coconut fiber has been shown to be very effective in moderating blood sugar and insulin levels. For this reason, coconut is good for diabetics.

Diabetics are encouraged to eat foods that have a relatively low glycemic index. The glycemic index is a measure of how foods affect blood sugar levels. The higher the glycemic index, the greater an effect a particular food has on raising blood sugar. So diabetics need to eat foods with a low glycemic index. When coconut is added to foods, including those high in starch and sugar, itlowers the glycemic index of these foods. This was clearly demonstrated by T. P. Trinidad and colleagues in a study published in the British Journal of Nutrition in 2003. In their study, both normal and diabetic subjects were given a variety of foods to eat. Some of the types of food included cinnamon bread, granola bars, carrot cake, and brownies—all foods that a diabetic must ordinarily limit because of their high sugar and starch content. It was found that as the coconut content of the foods increased, the blood sugar response between the diabetic and non-diabetic subjects became nearly identical. In other words, coconut moderated the release of sugar into the bloodstream so that there was no spike in blood glucose levels. As the coconut content in the foods decreased, the diabetic subjects’ blood sugar levels became elevated, as would normally be expected from eating foods high in sugar and white flour. This study showed that adding coconut to foods lowers the glycemic index of the foods and keeps blood sugar levels under control. Sweet foods such as cookies and cakes made using coconut flour do not affect blood sugar levels like those made with wheat flour. This is good news for diabetics who want a treat now and then without adversely affecting their blood sugar.

This is the most often asked question I receive regarding coconut oil. This is a legitimate concern because we have been conditioned to believe that all saturated fats raise cholesterol. Since coconut oil contains a high amount of saturated fat it would stand to reason that it too would raise cholesterol.

The truth is, eating coconut oil will improve your cholesterol values and reduce your risk of heart disease. Many people, however, have expressed concern after having their blood cholesterol checked and found that their total cholesterol has increased since they began using coconut oil. If coconut oil reduces risk of heart disease why did their cholesterol levels rise?

I have found that people’s response varies when they start using coconut oil. In some people total cholesterol decreases, while in others it increases. But in either case, their HDL (good) cholesterol always increases. The rise in total cholesterol that some people experience is due mostly to an increase in good cholesterol. Their cholesterol ratio (total cholesterol/HDL cholesterol) improves, thus reducing their risk of heart disease.

It is an established fact that the cholesterol ratio is a far more accurate indicator of heart disease risk than total cholesterol. Total cholesterol, in fact, is misleading and is a poor risk indicator because it lumps together both LDL (bad) cholesterol and HDL (good) cholesterol. Total cholesterol gives you no indication of how much is good and how much is bad. You can have high total cholesterol, but if a large percentage of it is made of up HDL, then your risk is low.

The lower the cholesterol ratio the better. A cholesterol ratio of 5.0 mg/dl is considered average risk. Above this value is high risk and below is less than average risk. A ratio of 3.2 mg/dl or less is considered optimal or the lowest risk.

If you have a total cholesterol value of 240 mg/dl, this would be considered high. You would be told that you are at high risk for heart disease. Your doctor would tell you to reduce your saturated fat intake and have you to take cholesterol-lowering drugs. However, if your HDL value was 75 mg/dl, your cholesterol ratio would be 3.2 mg/dl. This value is in the optimal range and you would have the lowest risk. Since the cholesterol ratio is a far more accurate indicator of heart disease risk, even though your total cholesterol may be high, your actual risk is very low.

Just the opposite can also happen. If a person has a total cholesterol reading of 178 mg/dl that we be considered ideal and be said to be at low risk. If, however, their HDL was only 35 mg/ld, their cholesterol ratio would be 5.1 mg/dl, which is in the high risk category! This explains why so many people who die of heart disease have normal or below normal total cholesterol levels and why many people with high total cholesterol levels live long lives without experiencing heart problems.

When people ask me about their cholesterol values I tell them to ignore total cholesterol and look at their cholesterol ratio. In every case, the cholesterol ratio improves when they start using coconut oil and their risk of heart disease drops.

Here is an actual case. A woman had a family history of high cholesterol. Family members had total cholesterol readings in excess of 400 mg/dl. After adding coconut oil into her diet her total cholesterol rose from 336 to 376 mg/dl. Ordinarily this is considered very high. However, her HDL (good) cholesterol nearly doubled from 65 to 120 mg/dl. Her cholesterol ratio dropped from a high risk value of 5.2 mg/dl to a low risk value of 3.1 mg/dl, which is in the optimal range. Although she had a very high total cholesterol reading, her true risk was very low. Her blood pressure was optimal at 110/60.

Studies have consistently shown that coconut oil increases HDL and improves the cholesterol ratio. While coconut oil does not reduce total cholesterol as effectively as polyunsaturated oils do, it has a greater effect on HDL. When HDL and cholesterol ratio values are evaluated, coconut oil reduces risk of heart disease more than soybean, canola, safflower, or any other vegetable oil typically recommended as “heart healthy.” Interestingly, most vegetable oils increase the cholesterol ratio thus increasing the risk of heart disease. Coconut oil is definitely the best oil you can use to protect yourself from heart disease.■

The Coconut Oil Miracle

This is an extremely well written article that gives a really good overview of what coconut oil can do. Kudos to the author for a very comprehensive and well documented Essay.

Coconut Oil, coconut milk and coconut water can replace so many of the dairy products and unhealthy fats that are in most kitchens today. I find that when I am baking now I use the coconut oil but I also throw in a handful of shredded coconut. It doesn’t change the flavor but your baking has and retains a moistness that you really come to appreciate.

I also find that I feel satiated (full) on smaller portions and that feeling stays with you so you are not reaching for that snack near as frequently. We really enjoy banana bread – I throw in a handful of raisins and shredded coconut. One slice mid-afternoon and I am good until dinner. Enjoy this great article!

The Coconut Oil Miracle: Where is the Evidence?Christine Tomlinson, MD, director of the National Candida Society, in the UK believes in the antibacterial properties of coconut oil, and advises candida sufferers (those with a yeast overgrowth) to include it in their diet. Mary Newport, MD, director of the neonatology unit at Spring Hill Regional Hospital in Florida, is a firm believer in the power of coconut for the treatment of neurological disorders, such as Alzheimer’s and Parkinson’s. She should, her husband suffered with Alzheimer’s for five years before she discovered coconut oil. With the aid of coconut oil he’s making a remarkable comeback. Others claim that it can help with diabetes, cancer, kidney and liver function, vitamin and mineral absorption, digestive problems, immune function, and weight loss. From all the glowing reports coconut oil appears to be a super food with a multitude of nutritional and medicinal uses.In recent years coconut oil has shot to superstardom in the world of health foods. Celebrities area using it, nutritionists are recommending it, and patients are extolling its many virtues.Yet, despite the growing popularity, some people are skeptical. How could one thing have so many health benefits? It sounds too good to be true. In addition, many doctors, dieticians, and other health care professionals have been reluctant to accept coconut oil as a health food. Coconut oil contains a high percentage of saturated fat. Saturated fats have been condemned for so many years, that they find it hard to change their opinions even when faced with evidence to the contrary.

The objection they state is always the same: there is not enough evidence to prove that coconut oil is harmless or that it has any health benefits.  “If it has any health benefits,” they bellow, “show me the evidence!” They demand peer-reviewed studies published in respected medical journals. By crying “show me the evidence” they are implying that there is little evidence and that there are no such studies available.

In recent years doctors and editors of health journals are frequently being asked about coconut oil. Most don’t know anything about it and consider it just another passing fad. Their answers reflect this view.

A letter sent to the editors of the Journal of the American Dietetic Association asks: “Is there science to support claims for coconut oil?” The editor’s reply begins by inferring that all the so-called health claims come from websites selling coconut oil and then states, “According to these sources, the health benefits of coconut oil help to prevent or mitigate a wide range of medical conditions. However…there is insufficient evidence to support the claims.”1

A similar question was posed to bestselling author Andrew Weil, MD. “We don’t have any evidence suggesting that coconut oil is better for you than other saturated fats,” he states on his website. “The benefits of coconut oil in the diet, if any, are likely to be minimal, and until we have more and better evidence about coconut oil’s effect…I do not recommend using it.2

Readers of Dr. John McDougall’s newsletter asked him the same question.  “Coconut oil is the newest miracle food promoted on the Internet and at health food stores for rejuvenation and cure of ‘whatever ails you,’” responds Dr. McDougall. “Advocates of coconut oil claim this sensational food has anti-microbial, anti-heart disease, anti-cancer, and anti-obesity benefits.  Furthermore, this fat is sold as a cure for low thyroid function (hypothyroidism).  This is a huge turnaround for a substance that has traditionally been thought of as an artery-clogging saturated fat. Testimonials provide most of the evidence for the miraculous effects these oils have on people, rather than well thought out and carefully designed experiments [italics mine].  Thus, most of these claims are based on a little truth overblown into a sales pitch for sellers of coconut oil.”3

The answers are all the same; the health claims are attributed to people selling coconut oil and that there is little or no evidence to back up their claims. Obviously, these doctors did not bother to take the time to research the question but simply gave their uneducated, biased opinions. That’s the problem with those who refuse to acknowledge new advances in science and medicine. They don’t take the time to find out and belittle those who have.

Celebrity doctor Mehmet Oz, MD, wrote an article a couple of years ago lambasting coconut oil in the same vein as those above. However, recently Dr. Oz reversed his stance and acknowledged that coconut oil is a healthy food and admitted that he himself now takes it every day. He even included several segments of his TV show to the benefits of coconut oil. Why has coconut oil had a bad reputation in the past? It’s not what you might think. The reason has nothing to do with science or with health.


“Show me the evidence.” That’s the universal battle cry of the critics. Is there sufficient evidence to justify the safety and value of coconut oil? There is actually plenty of evidence, if you know where to look. On the Internet there is a website sponsored by U.S. National Institutes of Health called PubMed (www.pubmed.gov). This is a research tool that indexes nearly 6,000 medical and biological journals published around the word.If you key in the word “coconut oil” you get a listing of all the studies in the database that involve coconut oil. Currently there are 1,315 studies listed. Over thirteen hundred studies, that’s a lot of evidence! New studies are continually being added. We can say to  
the critics are these enough studies? They would probably say “no, we want more studies.” OK, well you can find additional studies by looking up similar search terms like “virgin coconut oil,” “medium chain fatty acids,” “medium chain triglycerides,” “lauric acid,” “capric acid,” “caprylic acid,” and so forth. When you have done that, you will get a listing of over 17,000 studies! How’s that for evidence! This would blow their minds. Some of these studies, however, will be listed twice. So if we take into account some duplication, that still leaves about 10,000 studies on coconut oil.Ten thousand studies should be enough to convince any skeptic, especially when you consider that the FDA grants approval to new drugs if only two positive studies are published. The arthritis drug Vioxx, had only four published studies before it was approved. When new drugs are approved for distribution to the public, why don’t doctors stand up and scream for more evidence? When Vioxx, Baycol, and Darvon were approved why didn’t the medical community rise up in protest asking for more evidence for their efficiency and safety? They should have, since each of these drugs were later taken off the market because they were crippling and killing peopleWhen the Alzheimer’s drug, Apricept, was approved by the FDA in 1996 there were less than 10 studies available, not all of them positive. The effects of the drug have been less than impressive. A few of the studies suggested that some patients may benefit from taking the drug, while others failed to show any benefit. In general, less than half of those taking the drug demonstrate any benefit. When improvement does occur, it lasts only a few months and is not great enough to have any worthwhile effect on the patient’s symptoms or day-to-day functioning. The results have been generally disappointing, nevertheless, the drug was approved and is currently the most wildly used treatment for Alzheimer’s.
What price does the patient pay for the possibility of a few months of minor improvement? The price can be measured in terms of the adverse reactions from taking the drug, which may include any number of the following: diarrhea, dizziness, muscle cramps, nausea, fatigue, insomnia, vomiting, weight loss, seizures, and death. Is it worth it? While the benefits are only expected to last a few months, patients often continue the drug for years. Where are the voices calling for more studies on Apricept? Where are the voices challenging its safety? Is it because it is a chemical created in a laboratory that gives it acceptance among the medical community, while coconut oil being a product of nature is looked upon with suspicion?Coconut oil has caused no deaths or harm of any type. It’s been used safely for thousands of years. There is no risk in using it. Thousands of studies have proven its therapeutic worth and tens of thousands satisfied users can attest to its health promoting properties. Coconut oil has proven to be far more effective at treating Alzheimer’s than Apricept.4 Yet, critics still call for more studies on coconut oil.Admittedly, not all of the 10,000 studies involving coconut oil are of equal value, some provide little or no useful information. However, the same is true for drug studies as well, not all of them are useful either. Nevertheless, there are ample studies on coconut oil to clearly demonstrate its many nutritional and medicinal properties. Let’s take a brief look at the evidence behind the modern medical uses for coconut oil.

The number of studies that have involved coconut oil is far greater than the vast majority of prescription drugs currently on the market. Coconut oil has a long history of safe and effective use. It is ridiculous for people to cry out for more studies on the safety and effectiveness of coconut oil yet say nothing about investigating the safety and effectiveness of new drugs, which have the potential to do great harm as evidenced in the data above.

called medium chain fatty acids. In coconut oil these fatty acids are in the form of medium chain triglycerides (MCTs).In the 1930s and 1940s. It was discovered that when coconut oil was added into the diet it improved the absorption of various nutrients. For example, W.D. Salmon and J.G. Goodman at the Alabama Polytechnic Institute (now Auburn University) studied the effects of vitamin B-1 deficiency in animals given different types of fats. Vitamin B-1 deficiency leads to a fatal disease called beriberi. The fats and oils evaluated included olive oil, butter, beef fat, linseed oil (flaxseed), cottonseed oil, and other oils. When rats were given a vitamin B deficient diet, coconut oil was by far the most efficient in preventing the disease and extending lifespan. In fact, those receiving coconut oil actually gained weight, indicating continued growth even though the diet was nutritionally poor.5 None of the tested oils, including coconut oil, contains  vitamin B-1. However, coconut oil makes what little of the vitamin that is in the diet more biologically available, thus preventing the deficiency disease.A number of studies over the years have found similar effects. Coconut oil improves the absorption of not only the B vitamins but also vitamins A, D, E, K, beta-carotene, CoQ10, and other fat soluble nutrients, minerals such as calcium, magnesium, and some amino acids—the building block for protein.6 (Please note that for readability only a very few references will be included in this article. If all available references were listed, this article would swell to well over 30 pages in length.)The fact that coconut oil improved absorption of a wide variety of nutrients led researchers to investigate its use in treating malnutrition and malabsorption syndrome in children and infants. Eventually it was included in hospital feeding formulas for the sick and in infant formulas, especially for premature and low birth weight babies. When compared to other dietary fats, coconut oil produced faster growth, weight gain, and improved nutritional status.7 Coconut oil became a standard ingredient in all commercial infant formulas and still is today. Coconut oil or MCTs are also still used in hospital IV and feeding formulas to treat sick patients of all ages. Adding the oil reduces the patients’ recovery time and improves nutritional status.8In the 1950s researchers began investigating the nutritional and medicinal uses for MCTs. Harvard researcher Vigen K. Babayan, PhD is credited with developing the process of distilling coconut oil down into pure MCT oil. He called the purified oil fractionated coconut oil or MCT oil.9 A great deal of research followed and it was soon evident that MCTs possessed unique biological properties with a number of important nutritional and medical applications.

It was soon discovered that MCTs digest differently than other fats. When swallowed, most fats travel down the esophagus (throat), through the stomach, and into the small intestine where they are broken down by digestive enzymes and bile into individual fatty acids (long chain fatty acids). These fatty acids are then absorbed into the intestinal wall where they are repackaged into bundles of fat, cholesterol, and protein called lipoproteins. These lipoproteins pass into the bloodstream. As they circulate in the bloodstream they release little particles of fat and cholesterol that are utilized by the cells or stored as body fat.

The process is completely different with MCTs. When MCTs are consumed, they digest very rapidly and begin breaking down immediately. When they pass from the stomach into the small intestine, they are already completely separated into individual fatty acids (medium chain fatty acids) and, therefore, do not need pancreatic digestive enzymes or bile for digestion, thus relieving stress on the digestive system. Since they are already in the form of fatty acids when they enter the small intestine they are immediately absorbed into the portal vein and sent directly to the liver. In the liver they are metabolized into energy.10

The difference in the way MCTs are digested is very important because it provides a means to treat a number of medical conditions. Extensive research and clinical work in the 1960s and 1970s led to the use of MCTs for the treatment of a variety of malabsorption syndromes including obstructive jaundice11, cystic fibrosis12, tropical sprue13, a-beta-lipoprotenaemia14, intestinal lymphangiectasia15, pancreatic insufficiency16, and to speed recovery after intestinal surgery17.

Because of the unique way in which MCTs are digested and metabolized they produce an increase in energy and boost metabolism. For this reason, MCTs are used by athletes to improve performance. MCTs or coconut oil are commonly found in commercially produced energy bars and sports drinks marketed to people with active lifestyles.

This metabolic boosting effect diminishes fat deposition. This led researchers in the 1980s to begin investigating the use of MCTs as a means for weight management.18 Researchers from McGill University in Quebec, Canada and elsewhere are now recommending the use of MCTs as a means to treat obesity.19

In the 1960s Jon J. Kabara, PhD, a professor of pharmacology at Michigan State University, discovered that MCTs possess potent antimicrobial properties. In his search for a safe means to protect foods from fungal and bacterial contamination he found that MCTs fit the bill. Over the years he and other researchers found that MCTs can kill a wide variety of disease-causing bacteria, fungi, viruses, and parasites.20 MCTs were not only useful in preserving foods, but could be used topically and internally as antimicrobial agents to prevent and fight off infectious disease. Many common disease-causing microbes as well as potentially deadly ones like HIV and drug-resistant bacteria are vulnerable to MCTs.21-22 This aspect of MCTs is extensively researched. There are literally hundreds of studies on this topic and even entire books describing the antimicrobial effects of MCTs.

Because coconut oil is composed predominately MCTs, it possesses the same antimicrobial power, as evidenced in many clinical and laboratory studies.23

In the 1970s it was discovered that while the liver burns some MCTs immediately to produce energy, others are converted into ketones. Ketones are a super potent form of energy that are used specifically by the brain, but can be used by all the tissues in the body except the liver.

Ketones not only provide a high quality source of energy for the brain but trigger the activation of special proteins that function in brain cell maintenance, repair, and growth, thus providing a therapeutic effect on the brain. Since the 1970s MCTs have been used in ketogenic diets to treat epilepsy. Today modified ketogenic diets, using MCTs, are the standard dietary treatment for drug-resistant epilepsy.24

Besides epilepsy, ketones have been successfully used to treat a number of other neurological disorders such as Alzheimer’s disease, Parkinson’s disease, Huntington’s disease, ALS, stroke, narcolepsy, brain trauma, and brain cancer. The consumption of coconut oil can increase blood ketone levels to therapeutic levels that can successfully treat all of these conditions. Many patients with Alzheimer’s and other forms of dementia are currently being treated with coconut oil and are achieving far better results than the medications currently approved for these conditions. Studies show that MCTs can effectively mitigate the effects of Alzheimer’s and a dietary supplement designed for this purpose was approved by the Food and Drug Administration (FDA) in 2009 for the treatment of Alzheimer’s.

Coconut oil is known to aid those with diabetes by balancing blood sugar levels. MCTs improve insulin secretion and insulin sensitivity, thus reversing the underlying cause of diabetes.25

Coconut oil has very potent anti-cancer properties. When cancer is chemically induced in lab animals the addition of coconut oil into their diets can completely negate the carcinogenic effects of the chemicals.26

Coconut oil can prevent and even reverse liver disease caused by a variety of toxic agents such as alcohol, bacteria, drugs, and chemicals.27 It does the same for other organs in the body such as the intestines, colon, kidneys, and pancreas.28-30

Even heart health is improved with the use of coconut oil. While much criticism has been cast on coconut oil because of its saturated fat content, the evidence supports its heart friendly nature. MCTs are readily used by the heart as fuel. In fact, it uses MCTs in preference to glucose or polyunsaturated fatty acids as a source of energy. Ketones, as well, which are produced from MCTs act as a superfuel for the heart, increasing oxygen delivery by 39 percent and heart function by 28 percent. In fact, researchers at University François Rabelais in France are now recommending the use of MCTs for the treatment of heart diseases.

They have shown that the diseased heart is energy deficient and by improving oxygen and fuel delivery, heart function and survival is dramatically improved.31 The fact that that coconut oil is not harmful to the heart and may even be therapeutic is substantiated by numerous studies on coconut eating populations where heart disease rates are among the lowest in the world.32 Many other degenerative diseases are also much lower in these populations such as cancer, diabetes, colitis, liver disease, gallbladder disease, and dementia. Could it be due to the coconut in their diets?

Coconut oil has the potential to aid in the protection and treatment of a number of health problems due to its documented antimicrobial, antioxidant, anti-inflammatory, antiulcerogenic, antimutagenic, analgesic, and antipyretic activities.33-34 Scientists and pharmaceutical companies have recognized the importance of MCTs and have filed numerous patents for their therapeutic use in the treatment of Alzheimer’s disease, cancer, dental caries, periodontal disease, skin diseases, and various bacterial, viral, and fungal infections. Apparently the researchers at these companies feel there is ample scientific evidence to invest their time and money in procuring the legal rights to use them therapeutically.

The health benefits of MCTs are so well documented that the critics cannot argue against their nutritional and medicinal value or safety. However, some will argue that many of the studies were done using fractionated coconut oil or MCT oil, not coconut oil, and therefore, are not representative of the effects of coconut oil. This argument is just a smokescreen to justify the demand for “more evidence.”

Since coconut oil is predominately a medium chain triglyceride oil (63%), “the biological effects of coconut oil are a consequence of the presence of these acids,” says Hans Kaunitz, MD, professor of pathology at Columbia University Medical School and long time MCT researcher.35 Because coconut oil is composed predominately of MCTs, it influence on the body is characterized by theses fatty acids.

While critics may question if coconut oil has the same therapeutic effects as MCT oil, they will acknowledge that soybean oil is characterized by linoleic acid because it contains 51 percent of this polyunsaturated fatty acid, or that olive oil is a monounsaturated oil because it is 77 percent oleic acid (a monounsaturated fatty acid), or that fish oil (salmon oil in this case) is characterized by omega-3s because it contains 38 percent omega-3 fatty acids, yet it also contains saturated fat (22 percent) and cholesterol (485 mg/100g). Likewise, soybean oil and olive oil also contain saturated fats, so they are not pure either, but their character is defined by their predominate fatty acids and their saturated fat content is ignored as inconsequential. Conclusion: coconut oil is an MCT oil and its effects on the body are characterized by these fatty acids. This has been observed time and time again in studies and in clinical settings.

Some of the nutritional and therapeutic benefits of coconut oil come from the saturated fats in the oil, such as its resistance to oxidation, long shelf life, and superior cooking properties. Some come from MCTs such as the antimicrobial effects and its unique mode of digestion and nutrient delivery. However, most of its medicinal benefits undoubtedly come from the ketones produced from the MCTs. The protective effects on the heart, brain, kidneys, colon, pancreas, and other organs, its metabolic boosting and energizing effects, and its anti-cancer, anti-diabetes, anti-Alzheimer’s and other effects come principally from ketones.

If you do a search on PubMed for ketones, as they relate to MCTs and diet, you will find about 25,000 studies. Combining these studies with the 10,000 on coconut oil and MCTs, we have a total of over 35,000 studies describing the effects of coconut oil on health. Is that enough evidence? There is far more evidence demonstrating the safety and efficiency of coconut oil than there are for most FDA approved drugs.

Of course, additional studies are welcomed and encouraged, but to state that there is little or no evidence demonstrating the safety and value of coconut oil is simply not true. Coconut oil has been used successfully in traditional medicine for thousands of years, and in western medicine for at least 60 years with no adverse effects. It’s been granted GRAS (i.e. generally recognized as safe) status by the FDA.

Regardless of the number of studies available, the real test for the value of coconut oil is how it affects people’s lives. Coconut oil is helping thousands of people with various health problems. Here is a typical example. “I was once diagnosed with lupus, lichen planus (lost all 20 nails), ADD, depression, COPD, allergies, atherosclerosis with chest pain, metabolic syndrome, rapidly progressing to full blown diabetes, high CRP, high cholesterol, high triglycerides, chronic fatigue, and fibromyalgia,” says Peggy M. “I was living on inhalers, antibiotics, prednisone, antidepressants, sleeping pills, allergy meds and more…I began to try alternative things. I am sooooo thankful to say, I have been using organic coconut oil for several years…My thyroid meds continue to be decreased, and I no longer have to take any allergy meds besides shots. I’m afraid to quit them. My breathing problems are totally gone. I have healthy nails, no fibromyalgia, metabolic syndrome, or diabetes.” You can access similar stories here.

While testimonies like this may not provide “scientific” proof, tens of thousands of people can attest that coconut oil has changed their lives for the better. Medications may give good results in laboratory settings, yet in real life prove disastrous (i.e. Vioxx). Coconut oil has proven its worth in real life.

Whenever someone says, “Show me the evidence,” give him a copy of this article and say “here is the evidence check it out if you want to learn the truth.” If they demand more evidence, refer them to books such as Coconut Cures or Stop Alzheimer’s Now. Every health claim made in regard to coconut is backed up by published research and historical facts. Each book includes hundreds of references to medical studies.
